How to cook “summer” patties
You can cook these lovely patties in any season but in summer when there is a variety of available fresh vegetables they are so easy to cook, that is why I consider them to be “summer” patties. They are light and do not cause overload for our stomach due to absence of bread in the content. Vegetables make the patties very tender and light. In addition it is a wonderful opportunity to feed a child and all your family with various vegetables in a secret way, because in patties they will not even recognize a presence of them. And the main thing, the patties are very easy in cooking, even easier than ordinary cutlets. I used the vegetables I had in the fridge at the moment, but they can be perfectly substituted by any other vegetables you prefer. Irreplaceable components are meat, eggs, and onion, only.
- Meat – 2.2 lb (1 kg)
- Onion – 3 pieces
- Eggs – 2 pieces
- Vegetables (at your choice, white cabbage, broccoli, potatoes, greens etc.) – 1.5 lb (0.7 kg)
- Garlic – 1 piece
- Seed oil for frying
- Salt, pepper at your taste
In my case I have 2.2 lb (1 kg) of pork, but you can easily substitute it with beef (it will be even better), veal, chicken, etc. Meat needs to be minced, or you may use a ready-made minced meat if you are sure in its quality. We cut into large pieces all raw vegetable stuff, including garlic and greens, and then we mince vegetables after meat.
You see, we got such minced meat and minced vegetables, and now we just mix them together.
Beat eggs separately.
We stir minced meat with vegetables, and add the eggs, some salt and pepper, and any extra ingredients you like to add into patties minced meat. If you are not a staunch opponent of mayonnaise, you may add 1-2 tablespoons of it; it will make patties tastier. If the minced meat seems too watery, add a couple of tablespoons of semolina.
Shape burgers of a regular form and put them in the frying pan with the heated oil.
Fry patties on a slow fire until the golden crust on both sides. In my case it takes about 5-10 minutes to fry at one side.
That’s all, the patties are very usual from outside but appear to be very healthy inside. You may place them into the pot and simmer for a while but I didn’t do that.
This is how the patties looks like from the inside. Bon appetite!
- Zucchinis and marrow squashes are very good for these burgers. But they contain pretty much water. Before you mix them with your minced meat you need to grate them and to squeeze extra water, or if it is still too watery add some semolina into the minced meat.
