How to cook pasta with Bolognese sauce

The way of cooking of the true Bolognese sauce differs a little from the one I describe in this article. Besides meat and vegetables it must contain red wine and Italian Pancetta bacon. However any housewife probably has her own variant of the pasta sauce that resembles Italian Bolognese one. I have such a recipe, too. I composed it by means of successful and not very successful experiments. You will face no difficulties while cooking, and only cutting the vegetables will take some time.

You´ll need

  • Minced meat – 10.6 oz (300 g)
  • Onion – 1 piece
  • Carrot – 1 piece
  • Sweet pepper – 1 piece
  • Garlic – 2-3 gloves
  • Tomatoes – 2-3 pieces
  • Tomato paste – 1 tsp
  • Greens – 1 bunch
  • Pasta (any type) – 10.5-14 oz (300-400 g)
  • Seed oil for frying
  • Salt, pepper, spices to your taste

    It is preferable that the minced meat for the sauce would be home-made and would consist of pork and beef in half. But this time I used the minced meat of lean pork, the result is tasty, too. For the sauce you may use any greens you like, in my variant these are parsley, dill and basil. As for pasta type, the shape doesn’t matter, the main thing is to cook high quality pasta of hard wheat. Well, let’s start cooking!

    The fist and most time-consuming step is cutting vegetables. Cut all the vegetable into the smallest pieces, as the sauce demands. But I do not recommend you to blend the vegetables, as a result you get much moisture that makes sauce not so tasty. Chop the onion finely.

    Tomatoes should be ripe but not soft, choose harder ones to cut them easier. Cut tomatoes.

    Cut the greens as fine as possible.

    In the frying pan with the hot seed oil we slightly fry onion and carrot until they start to get the corn color.

    When the frying mixture gets the color, we add the minced meat and stir it thoroughly to prevent coarse lumps of fried meat.

    Now it is the right time to add some salt, pepper and all your favorite spices. Besides salt and powdered black pepper, I added a bit powdered red pepper and dried basil.

    Then we add sweet pepper, stir everything and fry all together for awhile.

    Now we add the main ingredient – tomatoes and tomato paste. You may add more tomatoes and go without tomato paste at all, as you like.

    After we stir everything thoroughly one more time, saute the sauce for a couple of minutes under the cover to let tomatoes give the juice.

    Now the final chord: we add greens and chopped garlic into our sauce, stir everything thoroughly and remove the frying pan from the fire. While stirring the garlic and greens had enough time to be cooked.

    I will not describe how to boil the pasta: even if you do it for the first time, follow the instructions on the package. Our dish is ready, bon appetite!

Warnings

  • The pasta with this sauce, like any pasta actually, is better to be served freshly cooked. You may cook the sauce beforehand and later just cook the pasta, heat the sauce and serve it together, I tried this way, the result is good.
  • You may not serve the sauce on the top of pasta, as you see on the photo, but add pasta into the frying pan with the sauce and mix together. The dish appears not as beautiful but very tasty!
  • Even if you feel ketchup would be the right topping here, do not do that – do not add ketchup! In this case the sauce loses its delicious taste but resembles fast-food instead.
