You´ll need

  • White cabbage – 5.5 pounds (2.5 kg)
  • Сarrot – 1 piece
  • Сranberry – 3.5 oz (100 g)
  • Salt – 1 tablespoon
  • Honey – 1 tablespoon
  • Bell pepper, bay leaf

    It’s better to choose cabbage of later sorts, they are the most dense and strong. Crumbly head of the cabbage isn’t right for salting.

    We slice the cabbage thinly.

    The main thing is not to miss the beginning of fermentation process – you will need to take the weight away, remove excess foam and with a sharp wooden stick or a knife with long blade we pierce the cabbage in a few places so to help gases out. Depending on the room temperature fermentation process may happen within 2-3 days, during all this time you need to pierce the cabbage twice a day with a knife or a stick.

Warnings

  • You shouldn’t add too many cranberries into the cabbage as it may become too sour.
