How to cook sauerkraut with honey and cranberries
There is a huge amount of sauerkraut recipes; every housewife has her own, tested recipe that allows providing yourself with tasty, crunchy cabbage. This recipe is not really common, but the cabbage cooked with honey and cranberries turns out to be very tasty and twice healthier.
- White cabbage – 5.5 pounds (2.5 kg)
- Сarrot – 1 piece
- Сranberry – 3.5 oz (100 g)
- Salt – 1 tablespoon
- Honey – 1 tablespoon
- Bell pepper, bay leaf
It’s better to choose cabbage of later sorts, they are the most dense and strong. Crumbly head of the cabbage isn’t right for salting.
We slice the cabbage thinly.
Carefully mix vegetables trying not to crumple them much.
We add salt.
And honey and once again stir everything carefully.
We put bay leaf and bell pepper on the bottom of a saucepan or a jar.
Spread layer of cabbage, above fill it with washed and dried cranberries.
We cover the cranberries on top with cabbage again and do like this several times until the capacity is completely filled.
Put the pressure on top and leave the capacity with cabbage to stay in room’s temperature.
The brine which starts foaming is going to appear soon – the process of fermentation starts.
The main thing is not to miss the beginning of fermentation process – you will need to take the weight away, remove excess foam and with a sharp wooden stick or a knife with long blade we pierce the cabbage in a few places so to help gases out. Depending on the room temperature fermentation process may happen within 2-3 days, during all this time you need to pierce the cabbage twice a day with a knife or a stick.
When the fermentation process is finished we put the cabbage into a fridge where it will be kept.
The cabbage turns out to be crunchy with refreshing sour-salty taste. Salting of cabbage allows keeping maximum of vitamins in it and adding cranberries makes it twice healthier and tastier.
- It’s very important to watch for the process of fermentation. If you don’t remove gas from the cabbage in time it may turn too sour, unpleasant smell may occur.
- You shouldn’t add too many cranberries into the cabbage as it may become too sour.
