How to bake simple cheese biscuits
There are several reasons why I like this recipe so much. Firstly, it is very simple: the whole process of cooking the biscuits before they are inside the bake oven takes maximum 20-30 minutes. Secondly, the main ingredient of this recipe is the cottage cheese, in addition it has low sugar content, thus, I think these biscuits are perfectly suitable for the kids’ nutrition. Thirdly (what is more important!), we make it together with my small grandson. Dealing with various molds and shaping the biscuits delivers a great pleasure for him, and later he treats his friends in the yard with the biscuits that were baked with his personal participation. Finally, the biscuits appear to be delicious, delicate and in the best home-made traditions.
- Cottage cheese – 8.8 oz (250 g)
- Butter – 3.5 oz (100 g)
- Flour – 8.8 – 10.5 oz (250-300 g)
- Sugar – 2 tsp
- Vanilla sugar – 1 package or a pinch of vanillin
- Parchment paper
Any type of cottage cheese will do for this recipe: whether it is home-made cottage cheese or curds bought in the store, it does not matter, even slightly salty cottage cheese will do. If the cottage cheese is too lean, you can add some more butter, and the opposite way: if the cottage cheese is too fat, add less butter. In the bowl for dough werub the cottage cheese through the sieve mixing in to the smooth paste with out particles. If the cottage cheese is homogeneous and smooth by itself, you may skip this step.
Into the same bowl with cottage cheese wegrate the butter on a coarse grater. It is more convenient to do if the butter is cold. We add vanilla sugar or vanillin to the cheese-butter mixture.
We mix everything thoroughly.
We add flour and make the dough. You may need more or less flour than it is given in the recipe. You can check on the photo what thickness the ready dough must have. Here I got such a dough ball, while my grandson was already preparing his favorite molds.
Now we need to roll out the dough and to sugar it on the top. It is convenient to roll out the dough between two layers of the cooking parchment paper: the table and rolling-pin are clean in this case.
Now we start the most interesting and amusing step – we shape the biscuits with the help of various molds. The leftovers after the first laying out are used again for laying out more times until it is finished.
Cover the baking tray with the parchment paper (if the parchment paper in the roll, cut the necessary sheet)
Place the biscuits on the baking tray and put it into the oven heated up to 356-392 F (180-200 C). Baking time is about 30 minutes.
Now let the ready baked biscuits cool down.
That’s all, a nice afternoon snack for kids is ready! To tell the truth, adults may be seduced by these delicious biscuits with coffee, too. Bon appetite!
- The amount of biscuits placed onto one baking tray (you can see on the photo) is 2/3 of all the output (out of 8.8 oz (250 g) of cottage cheese).
