How to cook cottage cheese pancakes
My son hates cottage cheese and cannot stand any cake cheese for kids that you can easily find in any grocery store. That is why in order to include this healthy foodstuff into his food ration I try to cook the dishes with cottage cheese as much as possible. For example, cottage cheese pancakes like these. In this recipe I cook a lot of pancakes, so if you need to feed a kid you can cut the amount of ingredients three times.
- Cottage cheese – 1.1 – 1.3 lb
- Eggs – 2 pieces
- Sugar – 3 tbsp
- Vanilla sugar – 1 bag
- Flour – 1 cup
- Oil for frying
In the bowl put the cottage cheese, sugar and vanilla sugar and mix them up. If there are hard particles in the cottage cheese you can pass it through the sieve.
When the cottage cheese becomes smooth, add eggs and mix it again.
You have a sweet fine colored cottage cheese mass. On this stage you can add raisins, lemon peel and other filling agents to your liking.
Add flour and knead dough.
The dough must be soft. It may stick to hands, but it shouldn’t spread.
Now on the table with flour make large sausage-like pieces. Then cut them and form round pancakes. Dredge each pancake in flour.
Heat oil in a frying pan, then put cheese pancakes and cook until lightly browned.
Turn them over (better with a flipper) and fry another side.

- Cottage cheese may be dry or wet, so you may need more or less flour. If you don’t have much experience in cooking cottage cheese pancakes, add more flour. Pancakes will be harder, but they will be easier to handle.
