How to cook homemade Beef Stroganoff

As soon as you start cooking by some well-known recipe, you are trying to follow it completely. Then, when you get used you gradually start changing and adapting the recipe to your liking. This is what happened with my recipe of cooking Beef Stroganoff. I added tomato to sour cream, because I wanted it to be sourer, I easily replace water and beef with lean pork, and this is already the recipe of my family. We like it and I call your attention to it.

You´ll need

  • Beef or lean pork flesh – 2 pound (1 kg)
  • Middle sized onions – 2 pieces
  • Sour cream – 2 tbsp
  • Tomato juice – 1 cap
  • Salt, ground pepper, bay leaf to your taste
  • Vegetable oil for frying

    It is preferable to take beef for Beef Stroganoff, but it can be quite well replaced with lean pork. It’s more convenient to cut meat, when it is a little bit frozen. I usually take meat out of my freezer, wash it, and leave it for an hour. At first I cut it into medallions, then into such oblong pieces.

    I cut onion into rather large half rings while little pieces of meat are thawed.

    We heat up pan and pour out vegetable oil on it for frying. There should be little oil, only enough for frying meat. We are frying meat till we get ruddy crust.

    The meat can be stewed in the same frying pan, but it’s more convenient to be done in a saucepan. So we put it to the saucepan where we will than stew it.

    We add salt, ground pepper and bay leaf there.

    Meanwhile, we are browning onions on small amount of oil again.

    When it is slightly browned, we add 2 tbsp of sourcream to it.

    We mix onion with sourcream, leave it to boil.

    We pour out glass of tomato juice into boiling sourcream. It can be completely replaced by 1 tbsp of tomato paste diluted by glass of water.

    We again mix everything well, again leave it to boil.

    And we put or rather pour it into meat. If our mixture doesn’t cover the meat completely you can add a little water.

    We cover the saucepan with a lid and put it on a small fire for 40 minutes.

Warnings

  • We need to fry two times: at first – meat, then – onion. I strongly advice you not to use the same oil, it is considered to be very bad for your health. You should better take other frying pan or wash this one and pour other oil to fry.
