Whole roasted turkey – is a festive, tasty and not very easily cooked dish. Honestly speaking, it’s not so difficult to roast the trunk of the turkey, but how can we make it, so that after staying long in an oven the meat won’t dry up, but became tender, juicy and fragrant? If time permits, you may prepare the trunk for roasting in advance – as it is usually done on Thanksgiving, by making the special marinade. The recipe of marinade takes into account turkey of 8 kg (17.6 lb).

You´ll need

  • Water – 400 oz (12 liters)
  • Salt – 9 oz (250 g)
  • Sugar – 8.5 oz (240 g)
  • Pepper mixture (black, red, white) – 6 tablespoons
  • Cinnamon – 2 sticks
  • Caraway seeds – 2 tablespoons
  • Cloves – 6 strokes
  • Mustard (powder) – 6 tablespoons
  • Onion – 4 pieces
  • Garlic – 8 segments
  • Ginger root
  • Orange – 2 pieces
  • Honey – 8 tablespoons
  • Parsley or celery leaves

    According to sizes of the turkey the pickling process may last from 1 to 3 days, all this time the poultry should be in marinade in a cold room or refrigerator ( if it goes in). It’s enough to macerate the trunk of 8 kg (17.6 lb) during the day.

    We cook marinade. Weigh salt and sugar, you may take any salt, but I like to use sea salt more. It’s desirable to adhere to recommended proportion of water and salt, otherwise the meat turns out to be either too salty, or vice versa insipid.

Ideally the marinade should completely cover the trunk.
