How to cook lula-kebab in an oven
Lula-kebab – is very tasty dish of Caucasian cuisine, which is cooked on a brazier. But you can cook lula-kebab at home in an oven, the main point – you should cook this dish from fatty meat with lots of spices.
- Meat (fatty mutton or pork) – 17.5 oz (500 g)
- Onions – 10 oz (300 g)
- Garlic, spices, salt
The meat for cooking of lula-kebab should be very fatty, instead you’ll get cutlets not an eastern dish. If the meat is not fatty enough, you may add pieces of lard in your mince.
One more essential ingredient is onion. In the genuine recipe onion is finely chopped by hand. But you may put it through a meat grinder or chop in a food processor. You should have plenty of onion, about half of number of meat.
We add salt, garlic, spices (coriander, cumin, pepper) into mince and mix everything thoroughly. You can squeeze juice of lemon (use a half piece) into mince.
We take the mince away to the freezer for 30-40 minutes. Cooling the fatty mince becomes pliable.
We turn on the oven to heat up. We prepare baking sheet – we lay the grill which we cover with foil out on the baking tray.
We shape “sausages” from chilled mince around sticks. It will be more convenient to turn them over on sticks while cooking.
We lay products out on the foil and put them in well-heated oven. Lula-kebab will be baking for 30-40 minutes, during that you should turn them once. When lula-kebabs are browned from both sides, take them out of the oven.
You can serve lula-kebab on sticks on which they were frying or put into leaves of lettuce and decorated with vegetables and herbs.
- If you have no bamboo or wooden sticks, you may cook lula-kebab without them, by shaping such “sausages” with your own hands.
