How to make coconut cookies with almond
I want to recommend this recipe of cookies to all lovers of coconuts – in spite of the fact how simple it is (it is made of only four ingredients), the biscuits turns out to be very tasty, delicate and fairly sweet.
- Eggs – 2 items
- Coconut shaving – 7 oz (200 g)
- Powdered sugar – 3.5 oz (100 g)
We mix up powdered sugar with eggs and whisk them with help of mixer. The mixture must turn white and become a bit denser.
Add coconut shaving and stir until you get homogeneous mixture.
If the dough turns out to be watery, you may add a bit more coconut shaving.
We form cookies. You can make it round or shape it like a chocolate truffle by pulling out the top. We hide fried almond inside.
Lay out ready cookies on a baking sheet, covered with parchment baking paper. We bake it in an oven previously pre-heated during 15-20 minutes.
Your cookies should turn brown, especially on the top.
You should serve cooled down cookies. It is much tastier this way.
- If you over bake cookies in your oven, it will be drier and not so tasty.
